DAY 1: Practical Allergen Management on 2 March
FACTS and AIB International are once again combining their skills
and experience to present a workshop on the practical management
of allergens in food manufacturing facilities. The presentations
will be primarily focused on the development, implementation and
verification of effective allergen control plans in the food plant,
and will be applicable to all those employees involved in the
handling, processing, packaging and managment of allergenic materials.
Exercises will be included to assist delegates in understanding
and practically applying the allergen control measures discussed.

DAY 2: Advanced Allergen Management on 3 March
FACTS is extending their offering by providing an advanced allergen
management workshop. The presentations in this session will be primarily
targeted towards those employees that require a more in-depth knowledge
of allergen control, including managers, supervisors and those involved
in the development and implementation of control plans in the food plant.
New material that will be presented will include a relevant discussion
by Prof. JFR Lues (Central University of Technology, Free state) on
human behavior and food safety, and the link with effective employee
training and motivation; "trouble shooting" actual allergen
case studies experienced by the food industry; and an essential and
comprehensive section on effective cleaning to remove allergens.

AIBI: Rolf Uys has been with AIBI for 7 years
and currently holds the position of Manager, European, African and
Middle Eastern Services. He has conducted +- 700 food safety audits
in 30 Countries and has presented +- 300 HACCP and GMP workshops.
He holds a MSc. Food Science degree at the University of Stellenbosch
and is certified lead auditor for the BRC, ISO 22000, HACCP, QSE
and GMA- auditing schemes. |

Central University of Technology, Free State:
Ryk Lues is currently full professor and head of the programme
Environmental Health at the Central University of Technology,
Free State. He is leader of the Unit for Applied Food Safety and
–Biotechnology (a developed NRF niche area) and manager
of the Centre for Environmental, Community and Industrial Development.
He holds an MSc (Microbiology) and a PhD (Food Science) from the
University of the Free State and his field of specialization comprises
social-behavioral aspects impacting on food microbiology and hygiene,
as well organic acid biotechnology. He has to date authored more
than 46 articles in ISI accredited journals, contributed to 4
books and presented papers at conferences, symposia and related
scientific meetings locally and abroad on more than 60 occasions.
He has to date supervised 10 masters, 4 doctorate and 5 post doctorate
candidates and often acts as external examiner, referee and auditor.
His current representation on standing referee committees includes
membership on the editorial board of the Journal of Food Protection
as well as specialist panels of the NRF and BioPAD. He holds an
NRF C-rating. |
