Food safety is defined as unintentional contamination of food whereas food defence is the intentional contamination of food. This could be caused by terrorists, extortionists, extremists, criminals or disgruntled employees. Whilst the threat is greater in western countries such as the USA or Europe, it still remains a significant and growing risk to all food manufacturers worldwide. It is also fast becoming a prerequisite requirement for global food export and included in all major food safety certification schemes. In South Africa food defence is generally over simplified by seeing it as perimeter and gate security only.

This hands-on workshop, brought over from AIB international in the USA , administrated by FACTS SA and customised for South Africa, provides practical guidelines on the content and implementation of a food defence program.

From AIBI:

  Rolf Uys has been with AIBI for 7 years and currently holds the position of Manager, European, African and Middle Eastern Services. He has conducted +- 700 food safety audits in 30 Countries and has presented +- 300 HACCP and GMP workshops. He holds a MSc. Food Science degree at the University of Stellenbosch and is certified lead auditor for the BRC, ISO 22000, HACCP, QSE and GMA- auditing schemes.
  Deryck Tremble has worked in the Food Industry for 30 years and for the last 15 years with AIB International, he began as an auditor and has now been Regional General Manager - Europe, Africa and Middle East for the last few years, previously he worked for Allied Domecq, Kraft, Unilever and Associated British Foods in Production and Quality Management Roles. He has audited facilities and trained personnel all over the world. He speaks at many seminars and enjoys highlighting the importance of Food Safety, Food Defence and Allergen Management.
  Charl Jooste, a qualified food technologist, has worked in South African food industry for more than 10 years. 7 of these years have been with the Pioneer group, performing product development, quality and food safety management roles. The last 3 have been with AIB International doing food safety auditing and presenting in-house training courses in South Africa, Africa and the Middle East.
