SANS 10330: DSS Draft Standard out for comment

A new draft version of SANS 10330, Food safety management ― Requirements for a food safety system based on prerequisite programmes and Hazard Analysis and Critical Control Point (HACCP) principles, is open for comment for the next two weeks. The new draft boasts a couple of new items previously not looked at. What has been suggested?

New definitions have been added to the standard; for example, there is now a definition for ‘competent’. An extra note has been included in the draft under the definition for ‘food handling organization’, which addresses potential food safety hazards transferred from the origin-ingredient used to the final product.

There is a new section that details the requirements of a food safety policy, as well as a section on general food safety management and the carrying out of internal audits in a processing facility that makes reference to SANS 19011.

Most importantly, there is a section on the training of all staff involved in the creation, implementation and maintenance of the food safety system.

The draft also includes an Annexure with a handy table for cross-referencing CODEX HACCP and the draft, to make following the standard easier.

Finally, there is more detail given in the draft regarding how to go about controlling documents and records. There is a focus on the implementation of continuous improvement programmes in food handling organisations in general.
